Ingredients:
- Beef (tenderloin), 480 gr.
- Red onion, 50 gr.
- Tomatoes, 2-3 PCs.
- Grainy mustard, 30 gr.
- Coriander, 0.5 tsp.
- Wine vinegar (white), 30 ml
- Garlic, 2-3 cloves
- Thyme
- Rosemary
- Dill
- Olive oil
- Black pepper
- Salt
Preheat the oven to 180°C.
Cut tomatoes and onions into cubes, finely chop herbs, peel garlic.
Mix mustard, onion, vinegar, coriander, a little olive oil, press or rub the garlic, mix everything and let it infuse for 2-3 minutes.
Add tomatoes, dill, pepper, salt to taste and mix.
Cut the meat into portions, lubricate with a small amount of olive oil.
Fry the meat in a pan-grill for one and a half minutes on each side over high heat.
Brush lightly with olive oil, sprinkle with rosemary and thyme on all sides and bake in the oven for 10 minutes.
Let stand for five to seven minutes and serve with vegetables.
